Homemade Chocolate Cake
I had a sweet-tooth tonight and decided to bake a chocolate cake. I LOVE this recipe because it's SO easy and SO yummy. You really have to give it a try.
It's called a chocolate picnic cake because it doesn't have icing; it has chocolate chips on top. In theory, it would be easy to pack for a picnic. Trust me --- coming from an icing-kinda-girl --- you don't miss the icing because the chocolate chips make it so decadent.
Here's the recipe:
2 1 oz. squares of unsweetened chocolate
1 1/4 C all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
1 C sugar
3/4 C cold water
1/3 C vegetable oil
1 C semisweet chocolate chips
Melt the chocolate squares in the microwave and set aside to cool for 10 minutes. Combine flour, baking soda, and salt, set aside. In a mixing bowl beat the egg and sugar. Beat in the water and oil. Stir in the melted chocolate and dry ingredients. Mix until well blended. Pour batter into an 8x8 baking pan. Sprinkle chocolate chips on top. Bake at 350 for 32-38 minutes. Cool before serving (Yeah, right!) Makes 9 servings.

yum! you bringing any leftovers to school today? j/k! i'm impressed that you had those ingredients around to just whip that up! that would have taken a trip to the grocery for me.
