Yummy Dinner . . . Try This!

I have fixed this Zucchini and Sausage Casserole a few times now. It is so yummy that Grace practically licked her plate clean the other night when I fixed it. It's definitely a comfort food, and honestly, it reminds me of biscuits and gravy. Here's the recipe:


Zucchini and Sausage Casserole

4 Medium Zucchini, quartered 1/2 inch thick
1/4 Cup of melted butter
1 lb. of breakfast sausage
4 Cups of Chicken Flavored Stuffing Mix (i.e. Stove Top)
1 Can of Condensed Cream of Chicken Soup
8 oz. of Sour Cream
Black Pepper to taste


Brown sausage in a large skillet. As the sausage browns, sautee the zucchini in the same pan (yes, they are cooking together). Combine Cream of Chicken soup, sour cream, and pepper. Stir the melted butter into the stuffing mix. Spray cooking spray in an 8x 13 casserole dish. Layer 2 cups of the stuffing and butter mixture into the bottom of the casserole dish. Combine the cooked sausage and zucchini with the soup and sour cream mixture. Layer the sausage, zucchini, soup, etc. over the stuffing. Complete the layers by spreading the last two cups of stuffing on top of the zucchini sausage mixture. Bake in a 350 degree oven until the casserole is heated through.

I'm telling you . . . they'll eat their vegetables when you serve this!Do you see how clean that plate is?
